I've decided I will now use this blog to chronicle my "Recipe Challenge." In January, for my New Year's Resolution, I vowed to increase the variety of foods I prepare. Between January and March, I had a list. I can no longer find my list, and have no idea what number I am on. I will start fresh, and begin numbering now. The fish from a couple of days ago will be number 1.
Recipe # 2: Cheese Tortellini, Shitake Mushrooms, and Zucchini with Sun-Dried Tomato Pesto.
I created this recipe all by myself with ingredients from Trader Joes.
2-3 T Olive Oil
3 cloves of Garlic(minced)
1 whole shallot (minced)
2 Zucchini (cut into 1/4 inch circles)
1 package of Shitake Mushrooms (chopped)
1 tub of Trader Joe's Sun-Dried Tomato Pesto
Salt and Pepper to taste.
Trader Joes' Cheese Tortellini
Parmesan Cheese
1. Head the o.o. in a skillet until it's hot.
2. Saute garlic and shallots until golden brown.
3. Add the mushrooms and the zucchini, saute for about 10 minutes (flipping half way) until desired softness.
4. Add tub of sun-dried tomato pesto, and heat until hot.
5. Serve over store bought cheese tortellini.
6. Salt and Pepper to taste.
7. Serve with Parmesan cheese.
