We definitly needed some relaxation this weekend. On Saturday, we found some opakapaka at Costco. (http://www.wildoceanseafoods.com/Hawaiian_Pink_Snapper_Opakapaka_s/6.htm)
I found a recipe online to use the fish, here is the version I made with my adjustments...
For the sauce
- 1/4 cup ginger (rough chop)
- 1 cup shallots (rough chop)
- 1 oz. sesame oil
- 2 oz. vegetable oil
- 8 whole garlic cloves
- 1 cup green onions (rough chop)
- 1/4cup rice vingegar
- 1 cups soy sauce
- 1/2 cup cilantro
- 3-4 oz. sugar (adjust by adding more if too salty)
For whole opakapaka Add garlic, lemon, and shallots into the interior of the fish. Pat with butter. Wrap the fish with tin foil. Bake 45-50 minutes at 350 degrees.
To assemble Place the pan fried fish on the plate. Top with the sauce.
